To take a centimetre off the top end of any of my reeds would do more
than 'alter the sound'. Sorry, but I'd assumed that you would all
understand I meant the bottom end in this context.

The difference to the sound is of the order of magnitude of the
difference you make by changing the ligature -- unsurprisingly, I'd say,
since both changes alter the vibration of the part of the reed not in
contact with the aircolumn.

Classical mouthpieces have a very short table below the slot.
