When Ed Lacy mentioned that music was a form of communication I think he hit the nail right on the head. As a young student I was terrified! I would go into an audition and play the first piece wonderfully and then while I was turning the page to go to the next piece I would just fall apart and the second piece sounded like they yanked someone off the street to play. For me the real breakthrough was a public speaking course. I absolutely loved it! I was never more than a little on edge (and a little is good) because I knew I had something to share; something really interesting and worthwhile that chances are the audience didn't know before I stepped up to the podium. When I frame my performances in that light it makes it much more rewarding and much less nerve wracking. It also helps me to talk before/during the performance- it shakes out whatever residual nerves I have and lets me settle down to play.
