I've played in both kinds of situations (well, more American folk dancers than
drunken Greeks, and not so many banknotes), and I agree that classical concerts
are much more intimidating. It may be true that people are just there to have a
good time in both cases, but a single squeak or wrong note is much more
distressing to both the audience and the player in classical music.

What I hear from an expert is that Turkish folk clarinetists tend to modify
their mouthpieces to an extremely open facing, for more flexible pitch and
incredible loudness; so the soft reeds make sense.
