Walter,
I can understand your reaction, hearing how you've been burned in the past!
I was merely suggesting you not judge everyone based on your experiences! By
all means, don't lend your instruments out if you don't want to! It's
obviously up to you!
I, personally, though, am grateful to all the people who have lent me
instruments over the years. It is just common sense to me to take good care
of borrowed instruments so there is a chance that I will be allowed to
borrow it again! I could never understand borrowers who do not consider
this!
As for your other experiences:
"Double" pay: you could just suggest they hire people (at full rate!) to
play the other instruments! Maybe then paying you to double would seem more
of a bargain to them! (This is why doublers are paid more in the first
place: the skill is a commodity that ultimately saves the contractor MONEY!)

I'll end with a true anecdote that might have something to do with "string
doubling":

When we were planning our wedding, my mother (who is NOT a musician) called
a violinist she knew to inquire about the cost of her quartet playing at the
ceremony. When the quoted price was too high, my mother asked about the cost
of them bringing a trio instead. The violinist replied that it would cost
the same, as the three of them would have to work harder to make up for the
one who wasn't there!

I alternate between being appalled and applauding the violinist!
