I might be of help with the mystery of the pronounciation of Chadash. I had the privilege of speaking to Guy in his native tongue, Hebrew, but I got too nervous and quickly reverted back to English. It's pronounced cha-DASH. The "ch" is most definitely a gutteral and the word, Chadash, means "new."
I'd go down and try them out in person. Think about it. He'd have too much pride to sell you a crappy one in person whereas Buffet are willing to sell you anything as long as Chadash's name is written clearly on the barrel. I got a really nice one for my B-flat.
