I've used Encore (v 3.0 and 4.0) for five or six years now, and personally I
find it to be very easy to use. Provided you have a MIDI keyboard, input is
easy; it does everything I need and I get a great looking score out of it.

Current version of Encore (4.2) is junk (even with the much needed patch,
the program is still not very stable, reminds me of Microsoft IE 4 when it
first came out). Many, many coding problems with the 4.2 series. Gvox is
working on a new release of the Encore series. They got the program (out
bidding Coda), but none of its employees, so they are starting from
scratch, but are working to improve the code as I was told by them. Finale
98 is very nice. Cakewalk 8 Pro I use also, and like that one a lot too.
