I don't know this particular piece at all, but as a pianist for most of my
life, I can tell you that the presence of three staves does not automatically
require the use of three hands. Often, a composer will use a third staff as a
way to highlight a countermelody or sub-line in the bass, especially when
intermixing the parts on a single staff would be confusing.
For example, the haunting Rachmaninoff Prelude in C-Sharp Minor is written on
four staves, but is quite playable by one person.
