I make a point of keeping "records" of my work: I have files that
contain my work in various stages, and I've gotten into the habit of
writing the date on the page whenever I write. True, this may not hold
up as undisputed evidence in a court of law, but I feel it at least
shows that the work evolved and was not just "lifted"!
