Generally, you suspend the third, unless otherwise suspended:
Normal C major 7: CEGBb (Bnat MM7)
Sus C Major 7: CFGBb (Bnat MM7)

(This is a 4-3 suspension).

Any suspended chord usually resolves to the normal counterpart, even if
only briefly, although there is flexibility in this as far as jazz goes.
Other suspensions maybe specified are the 6-5 (you'll see 'sus5')
6-5 Sus : CEABb (Bnat MM7) Resolves: CEGBb

This suspension is more commonly seen in 9, 11, and 13 chords. You may
also see 9-8 and 3-2 suspensions. The 9-8, you suspend a D a ninth above
the bass (should be tonic), and resolve it to a parallel tonic.
3-2s aren't something you'll be seeing jazz, I think. I THINK.

A circle is the standard symbol for diminished in any form of notation.
Where seventh chords are concerned, it refers to a fully diminished 7
chord, and a half diminished chord is represented with a slashed circle.

Diminished chords usually resolve to a major minor, a standard vi-ii*-V-I
sort of progression. In jazz, you'll also see this in a secondary
form: bVI/vi-ii*/vi-V/vi-vi-ii*-V-I, or similar forms.

A good example is Mark Taylor's Time Bomb, which uses this progression.
