There is a mail list dedicated just to midi wind instruments. You can find

Emulation comes up quite a bit as the techies get excited about using new
synthesis methods and whether it makes sense to mimic existing instruments
or develop unique electronic sounds. I can't recall them ever talking
about how to make a sound darker though.
Most of the list members are on Yamaha or Akai, but there's one guy in
Virginia who has built his own custom midi controller out of a gutted
clarinet. Bouvard Housticka is his name. He's always working on some new
modification. One of the first things he discovered was that making all
the notes exactly in tune made it sound fake so he had to go back and
adjust the tuning to the way a real clarinet responds.

Yamaha is advertising a new wind controller, the WX5, but has yet to
ship it. I saw it in the new Woodwinds and Brasswinds catalog. It looks
interesting and not too expensive. The ad stated that it would work
with any sound module, which makes it appealing.
BTW, if you're primarily looking for something to use with a notation
program and have limited room you might want to check out a short
midi keyboard. With Finale and other midi programs you go back
and forth between the midi controller and the qwerty keyboard a lot when
entering data. If you were using a wind controller you would have
the extra steps of putting it down and picking it up as you switched
between
it and the qwerty keyboard.
