I have a rosewood recorder, and do woodworking, and have used (among the common
woods) rosewood, cocobolo, ebony.

The grain is far more open on the rosewood. Cocobolo is similar. The blackwood
(ebony, etc.) has a very tight grain as does boxwood and maple, so you can get
a glass-smooth finish. Redwood and cocobolo will leave the grain visible no
matter how much you sand it, like oak. Not to say it will let the air leak
out, but it is visibly different, and that's probably where the acoustic
differences come in. The smoothness of the bore would be different. Wood
cannot be properly identified by colour alone, as stains and dyes can be easily
added, and the same type of wood can vary quite a bit in colour without any
staining or dying.

Despite what I said, I know that cocobolo would feel wonderfully smooth
with hardly any sanding, but you could see the open pores like oak.
