I like to to this because of the reason you stated, the lack of
literature for a particular instrument: Eb Clarinet. Usually what I do
is look on all the MIDI sites for some good flute or Bb Clarinet
literature, maybe violin or viola for that matter, and then use a music
program I have to convert the MIDI to score format. I've found this to
be a very effective way of obtaining some extra literature for Eb.

Some people are sure to disagree with this, but I think that it is
reasonable, especially when there's difficulty finding other stuff to
play. Maybe there isn't a lack of Eb literature, I'm sure it's out
there somewhere, but it is very, very hard to locate. So if you've got
the ability to transcribe, you might as well use it!
