The whole opera? That's one heck of a long blow!

One section out of Traviata would suit the Eb quite nicely, I think (as it
was already orchestrated for C in the original part): the "Brindisi"
section from the first movement (it's famous; you'll recognize it when
you find it in the score!). For a slow section, try the aria "Un Bel Di"
from Madama Butterfly (last act, I believe, and also famous).
