Thanks Clark Fobes for an illuminating discussion on this topic.

So do I understand that the concavity is really an attempt to get the reed
flat against the table at the point that the window opens up?

The technique that I have seen use to reface mouthpieces is a rather inexact
one of dragging the facing across emory cloth over a flat plate and checking
with gauges and doing a little more here, correct for uneven pressure etc.
etc.

If we had some sort of device that ground precisely, we wouldn't need a
concave table?
