Vivace is great fun, if very pricey. It'll be great for the students
who want to work with an accompanist but can't afford to do it a lot.
Vivace actually "listens" to the instrumentalist and will slow down or
speed up as the instrumentalist shapes the music. And, although I'm a
computer science minor here at State, don't ask me how they did it.

Another decent product for Mac/PC is Band-in-a-Box, although it works
best for jazz players who are in the same boat with combos as
classical players are with accompanists. It doesn't follow the
music the Vivace does, but it runs far cheaper-- about $60.00 retail
as opposed to $2000.00.
