Two pieces come to mind:

Varese - Arcana

Messiaen - Eclairs sur l'Au-Dela (virtually his last work).
The 8th movement (Les Etoiles et la Gloire) features CB solos, starting
on low writen C# (sounding a contrabassoon's low B). I've heard the work
in its World and US West Coast premieres.

Messiaen's opera _St-Francois-d'Assise_ also has contrabass, including
some solo work, though that's a little out of the symphonic realm (though
there have been concert, non-staged performances of at least portions of
the work).
