Personally I like to here a few key clicks and breathing noise now and then
in a recording, something to reassure me that I'm listening to an actual
acoustic instrument played by a human. Although, a clever fellow building a
good sample patch can sample key clicks and breathing noise and then
incorporate them into sequenced MIDI tracks. I've heard some incredibly
realistic MIDI stuff. I'll bet a superb MIDI technician could build a solo
clarinet sequence that would fool 95% of the people on this list, but it
would be a lot of work to do so.

Heck you could probably make a MIDI sequence that sounded just like
Stoltzman ;-)
