Yes Adam, there are books that dicuss performance practice for the
Classical era and that specifically discuss the woodwind cadenza in the
Classical era. Some of them are as follows:
The Eighteenth-Century Woodwind Cademza. David Lasocki. MA thesis,
The University of Iowa, 1972

Baroque, Classical and Romantic Preludes for Flute, Oboe and
Clarinet. David Lasocki, Betty Bang Mather. New York:
McGinnis & Marx, 1979

The Classical Woodwind Cadenza, A Workbook by David Lasocki and
Betty Bang Mather. McGinnis & Marx
Also, there are two books on Mozart ornamentation and csadenzas discussed
from the keyboard player point of view (unfortunately I cannot remember the
authors' name-sorry, if it comes to me I will e-mail you, other wise the
texts listed above should help you some)
