To add my 2 cents to the Sorcerer's Apprentice, I played it last spring and
was also trying to figure out the rationale for the notation. This is called
the French notation, I believe, and I have seen it used by non-French
composers as well (see b.c. excerpts to Alban Berg's Violin Concerto).

Anyway, I listened to the ensembles in the piece where I was playing bass vs.
treble clef. I noticed more often than not when I was playing in bass clef,
I was with bassoons and clarinets, low brass. Treble clef parts were most
of the time with cellos. I don't know if this is a valid explanation.

About that altissimo G, yep that is one. It's such a cool piece though, my
favorite parts are the soli with the contrabassoon, and later the part with
the octaves.

I had so much fun practicing and performing the piece, I now listen to it on
my walkman when I'm working out.
