Yes, it is possible.

The only device I can name is the IVL pitchrider (last I heard it was on
version 4, if I remember right, but this was several years ago). This
will take any monophonic sound source (sorry, no multiphonics allowed !)
and convert it to midi. I am sure there are other devices around, but I
can't name any.
I should also be able to use one of the guitar to midi devices,
replacing the input from the special pickup with a microphone - although
you would have to work out their wiring system first.

I am not sure what you mean when you say you want to graph the
information. If you are not looking to use the clarinet to control a
synth, but are looking to analyse what is going on with the sound, you
would be better off using an oscilloscope (preferably digital storage
type) and/or spectrum analyser.

conviction, and without having to ask lots more questions of my own ! -
