To all, here is MY cranberry nut bread recipe, from memory, and yes, as
in MUTS, bicycle spokes come in handy:
In a large Microwave safe bowl, melt one stick butter in the microwave.
Add 1/2-3/4 cup Heaven Hill Whiskey (tastes better after being baked
than those expensive brands). Add 1/4 cup Orange juice. Add a tablespoon
of vanilla and 2 cups sugar plus 1/4 cup brown sugar. Add 3 eggs and mix
well with a whip. Switch to a large spoon and add in 4.5 cups flour
plus 3 tsp. baking powder. Chop a cup of walnuts and mix in. From a bag
of cranberries (2 cups), remove squishies and stems, mix in those.
Batter should be just falling off the spoon slowly- add more booze to
wet it or more flour if too wet.
Butter coat 6 loaf pans, the small 31/5 x51/2" kind; 17 oz of
batter should fit in these; I bang them down on the kitchen counter to
settle them. Stand them 3 on the left, 3 on the right on a doubled
cookie sheet. Bake around 45 min in a 350 deg oven or until a bicycle
spoke (threaded end) comes out clean. Turn out on racks and cover with
foil after they are cool. Tastes/cuts best the next day.
