Sameer,
If you're using a metal plaque, switch to a rosewood plaque.
Don't sharpen the knife to get out the nicks, just smooth the burr with
a steel. This is quick and preserves the blade.
You can't get the knife too sharp. It's especially important to get the
correct angle on the burr (using the steel). Test it with your thumbnail.
If you want a longer lasting burr switch to a harder knife, like the
Medium or Hard Landwell or the Charles knife. You hardly ever have to
sharpen the Landwells--just smooth out the burr with the steel.
