The magic is in the use of a saturated salt / water solution, "brine",
rather than plain water. This virtually sterilizes the system, keeping
it clear of moulds. No mould spores ... no transmitted mould.
I too, have successfully used this system for many years, in storing
oboe reeds ... even those currently used, time permitting.
Storing reeds in such an atmosphere maintains them close to playing
condition, thus I believe their fibres undergo considerably less of the
stresses encountered in moist / dry / moist ... cycles.
