Find the Bodo Koenigsbeck bibliography, published by Musica Rara.
It lists 10 works for bassoon and guitar (9 different composers), and four
works for clarinet, bassoon and guitar.
Trevcomusic.com has a search engine where you can specify the
instrumentation; it lists 6 available works for bassoon and guitar, though
none for clarinet, bassoon, and guitar.
For the combination of clarinet, bassoon, and guitar, you could take any
baroque solo sonata, transpose the melody part for clarinet, play the bass
part on basoon, and have the guitarist fill in the chords. It is, of
course, significant work to do so.
