I cannot possibly add anything scientific to this fascinating
discussion but here is this:

I have one former teacher and one colleague who absolutely swear that a
reed does not perform properly until it's been gunked up just right by
the break-in process. They do not use the ultrasound cleaner for this
very reason.

And, of course, this shifts the perspective to what is added to the
reed by the human, rather than what is taken away.

Maybe it all comes out in the wash, so to speak?

All in all, I think what we double reed players manage to do with what
is basically two pieces of grass stuck together is pretty amazing.
