I have a fine ceramic stone that I use before every reed, or every other

Once a day I also use the fine side of a super punjab stone. When my knives
start to need it, I also use the rougher side. http://www.annhodge.com

On my oldest knife, which was long ago demoted to being used only for rough
work, I have to use a diamond stone about every other week.

I always use extremely light pressure, just the weight of the knife and no
more, on all of the above mentioned stones. These particular stones don't
use oil, but they have to be cleaned frequently. I do use water on the super
punjab.
