They record all the music at the end, in a matter of weeks.

I have just finished watching all the extras on the Two Towers DVD, and for
film 2 they recorded the music near London (probably for film 1 too). In
fact, the music was recorded in Watford Town Hall, which brought back
memories because I grew up in Watford and my first ever classical concert
was when my parents took me to one at the town hall.

(Not the best acoustic in the world, the comment on the making-of
documentary is that they wanted a unique sound. Still, the pan across the
orchestra gave a wonderful view of the bassoons. No idea who they were
though.)

The orchestra was basically a large orchestra, with a lot of extra bits
(e.g. lots of wooden percussion for the ents). The London Symphony Orchestra
records a lot of soundtracks, but I can't remember if it was them, and I
can't find the answer in IMDB:
