Just a suggestion. I recently ordered from Forrests Music a sharpening
guide for about $25.00 that holds the knife blade always at the same angle
to the stone. This works both on double hollow ground blades as well as
bevelled. Maintaining the same angle is extremely important in sharpening
so that you can avoid the blade becoming rounded with repeated sharpening,
which will eventually destroy its ability to hold a proper edge, which is
what happens when the same precise angle is not maintained.

I got good results immediately. I would be glad to tell anyone interested
about the rest of my experience with it.
