I have to admit to not knowing what musicologist Roger is referring to
with 'octave key', since the bassoon has a handful of keys that can be
considered octave keys (and many of them serve only one or two notes,
or are used in combination with others to assist getting the higher
notes.) Perhaps it is the whisper key. There are various taxonomies of
bassoon keying systems, the use of any of them on his part might have
made things a bit easier.

Taking it from the other side, Langwill's "The Bassoon and
Contrabassoon" places both Prudent and Porthaux side-by-side, although
he gives no indication that they collaborated, so we'll have to read
"two bassoons by" P and P as meaning "one each". Both of them were
active in the latter part of the 18th century, making their bassoons
very early classical French fingering-system bassoons.

The Paris Conservatoir has two bassoons in it which are mentioned by
Langwill, a five-key and a six-key. Modern bassoons sport keying
systems distributed around 25. Porthaux's bassoons range from five to
seven keys.

The simple answer to Roger's question is, "Baroque Bassoons lack the
keys you are looking for, but are no longer in use." Reference to any
of the many organology references, including Langwill, will get lists
of makers of bassoons of baroque and early classical design along with
pedigrees of keying systems, and as a student of musicology, looking in
this direction will open amazing new vistas for him.

ps: i saw with so many surprise in a museum 2 bassoons by prudent and
porthaux without octave key !

(im very surprise because i believed alls bassoons had automaticaly
